How to Layer Fondant Designs on Cookies

Layering fondant gives you a way to combine a clean background with a colorful embossed centerpiece. The trick is keeping both pieces flat, aligned, and free from excess adhesive.
Prepare the background first
Roll the background fondant evenly and cut it with the same outside cutter used for the cookie. Place the piece on a flat nonstick surface so it keeps its shape while you prepare the center design.
Finish the decorative piece separately
Create the embossed center in one or more colors. Complete any small adjustments before attaching it to the background because detailed areas are harder to work on after layering.
Check the placement dry
Before adding adhesive, position the decorative piece over the background to see where it should sit. Note the spacing around the edges and any design elements that need to line up.
Add minimal adhesive
Use a tiny amount of water or edible adhesive on the back of the decorative piece. Avoid wetting the edges heavily because moisture can squeeze out and leave shiny marks.
Lower rather than slide
Place the design straight down in its final position. Sliding soft fondant across the background can stretch the piece or smear colors.
Press only where necessary
Use light pressure to secure the layers. Avoid flattening raised or embossed details. If possible, press gently around sturdier portions of the design.
Let the topper rest
Allow the layered topper to sit flat for a short time before moving it to the cookie. This gives the bond a chance to strengthen and can make handling easier.
Once the topper is assembled, attach the complete piece to the cooled cookie. Building the decoration separately gives you more control and lets you correct a fondant piece without risking the baked cookie underneath.
