How to Decorate Cookies With Fondant Using Cookie Cutters and Embossers

Fondant-decorated cookies can look highly detailed without requiring advanced piping skills. A two-piece cookie cutter and embosser system makes the process especially approachable because the outside cutter establishes the cookie and background shape while the center embosser creates the decorative design.
How the two-piece method works
The basic process uses three layers: the baked cookie, a plain fondant background cut to match the cookie, and a decorated embossed fondant design placed on top. Working with the layers separately gives you more control over color and detail.
Step 1: Bake and cut the cookies
Roll or press your cookie dough into an even sheet and bake it on a sheet pan. After baking, allow the dough to cool just enough to become easier to handle while remaining soft enough to cut cleanly. Use the outside cutter to cut the cookie shapes, then allow the cookies to cool completely before decorating.
Step 2: Prepare the fondant background
Roll white or another background color of fondant to an even thickness. Use the outside cutter to create a fondant piece that matches the shape of the cookie. Set it aside on a clean, nonstick surface.
Step 3: Create the embossed design
Roll fondant for the decorative center. Press the embosser evenly into the fondant so the details are clear without crushing the piece. Depending on the design, you can use one color or build a multicolor design by placing small amounts of colored fondant in individual areas before pressing and trimming.
Step 4: Layer the topper
Carefully position the embossed decorative piece on the background fondant. Use only enough moisture or edible adhesive to secure the layers without making the surface wet or sticky.
Step 5: Attach it to the cookie
Once the cookie is completely cool, attach the completed fondant topper. A very light application of edible adhesive, water, or another appropriate decorating medium can help it stay in place.
Tips for cleaner results
Keep fondant thickness consistent, use light even pressure with embossers, avoid stretching pieces when lifting them, and keep cutters clean between uses. Allowing the finished topper to firm slightly before handling can also protect detailed areas.
